Donna's Pumpkin Pie

Pumpkin Pie - Donna R.

Makes 4 Pies

7 Cups mashed cooked pumpkin
2 tsp. salt
7 Cups Rich Milk (so I use 1 litre of half and half then whole milk
to make 7 cups)
8 large eggs
2 2/3 cups brown sugar (or sugar substitute)
8 tbsp white sugar (or sugar substitute)
5 tsp cinnamon
2 tsp ginger (you can substitute fresh ginger)
2 tsp nutmeg
4 tsp cloves
4 tbsp flour sprinkled on top of mixture

Beat with mix master...all lumps of pumpkin do not have to be gone.

Pour into pastry-lined pie pan. Bake at 350 until a silver knife inserted into side of filling comes out clean. The center may still look soft but will set later.
